Mason Jar Berry Trifle

I had a half case of these things, left over from the baking party during Christmas time...they were just collecting dust and i kept thinking one day i will find a use for them.

And i finally did!

im such a geek.

we were invited to a BBQ and was asked to bring the dessert, cause face it- everyone knows i love sugar. probably way to much.

as i was skimming over my pinterest boards and foodnetwork.com, I finally decided on this

i adapted the recipe to make individual servings, fuh-reakin adorable!

The steps:

Clean your jars..i ran mine through the quick wash / heat dry of my dish washer.

I started with the lemon syrup, please don't get seeds in yours as i did mine. Heated until the sugar dissolved and pulled it off the heat to cool down.

1/4 cup of fresh lemon juice, 1/4 c water, 1/2 c sugar, add 1/4 tsp of almond extract when cooled


the cream got whipped up and popped into the fridge. i didn't use an entire two cups of the heavy cream, i added it until i got the consistency i wanted, almost like a pudding.
1 lb of cream cheese, I used neufchatel. 2/3 c of sugar, and 2 c of heavy cream. whip with hand mixer.


I then cut my strawberries into smaller pieces, added in my blackberries ( blueberries weren't on sale) and added a couple tablespoons of sugar, mixed, and let the berries macerate ( get juicy and extra delicious)
1 pint of strawberries and half pint of blackberries ( not nearly as many berries as the original recipe calls for)

If your ambitious and want to make your own angel food cake, i am jealous that you have that skill. i don't have that soft touch for baking as most do. so i purchased mine.


the recipe wants to you brush each side of your slices with the lemon syrup, i found an easier way to do this. Dunk it. Okay- well not all the way, i just dipped it until i could fill the syrup touch the cake, making sure the surface area was covered with syrup. i did both sides. i think dunking it would make the cake to tart and soggy. cut each slice into cubes after. about 1" or so.

Oh and i had to make sure it was the right lemon syrup to cake ratio.


Assembly: 4-5 cubes of angel food cake, a big dollop of cream ( think wood spoon dollop) then berries. Repeat one more time and screw on lids and refrigerate. transporting these things are easy too, no worry about spilling anything. This recipe would fill 6-8 jars.

me and the hubby had to taste test this creation..and we obviously didn't not like it :)

Totally off topic..
heather and tom have a hunting dog named Libby, here she is stalking a bird..it was so amazing to watch her inch closer and closer, all stealthily...dogs are amazing...we might get a chihuahua (might- its to be discussed still)

On the Menu:
Grilled chicken skewers marinated in soy, maple syrup and pineapple juice, served with a pineapple salsa, red potatoe and asparagus salad dressed with a lemony cilantro dressing. These gals are legitimate cheffy's, like, they went to school for it- hence the yummy menu.

I can only compete, mightily , with my trifle in a mason jar...it was a hit, i think :)
