Elder Victor Miller

Some of you may have known already- but little Victor is now an Elder! He will be serving his mission in Mesa, AZ after 2 weeks at the MTC. so crazy! Im glad he and Wes got to have some good brotherly time before he got to leave, which really just consisted of watching the Jazz games. My mother in law - i feel, is going to be  a wreck once she realizes she won't see her baby for 2 years. She has been so great putting together lunches and dinners for Victor and everyone he loves. i stole these pictures from my little sister in law.

Wes is bending his knees a little bit, Vic isn't that tall, but he's pretty tall :)

Egg, Spinach and Cheese......PLEASE!

 
 


10 Large Eggs
1 ENTIRE bag of spinach
1 Cup of grated cheese of your choice
Season eggs to your liking


beat eggs while spinach is cooking/wilting in a pan with about 2 TB of olive oil. add spinach to eggs- it will probably curdle a bit from the hot spinach...but uh....i think thats the point in the end.


350 degrees in a buttered pie dish
25 minutes, pull out of oven and add cheese, and cook until cheese is melted.
it comes out with a big dome, but it will deflate. cut into wedges and serve, or let the pie come to room temperature and portion out for this week's breakfast, or even lunch -served with a side salad and fruit. Im not sure if this is technically a quiche, cause theres no cream/milk in it. but its just as fluffy and yummy!

shoes, puffs and banana cookies

Let me just tell you what I've had to go through the past week- i had a part in letting go of someone at work. hardest week ive had since i started at UB. The emotional part of it, and pretending to keep it together at work, was tricky. My poor husband just witnessed a wreck walking around in his house for about 4 days.

So i finally just had to do something to get rid of all this emotion. I tried to workout- it helped a little, but i was still sad. so then....i organized and baked.



a month in the making, and it finally happened- i know where all my shoes are!
 


On to baking ( and such)


Puff Pastry Cherry Blossoms
just some tips when you are baking these 1) make sure you bake them on a silpat or some parchment- they stick. 2)  egg wash the corners before pressing them together- otherwise you get a blow out ( see below)  and 3) the icing really is key, it balances out the butteryness of the pastry and the tartness of the cherries.

just to tell you how much Wes loved these...

He ate an entire plate

THEN!!!

I made these....
 
I made this recipe a little more like a breakfast cookie. I used whole wheat flour, added ground flax and split the sugars between white and brown. In place of the nuts or raisins i added a handful of 62% dark chocolate chunks. i also used skim milk.  as Wes puts it, "it sounds like a poop storm" , INDEED!


So this was my night 


after three puff pastry cherry blossoms and a banana cookie ( i mean, a girl has to test these things) This was what i finally had for dinner.

Wes gets a (much needed) haircut


Straight out of Geico...

the first attempt didn't work, because...

Yep, thats a beard trimmer! I cut down his hair as short as I could with my scissors first then the artillery came out.

The Lebronster Comes to Town


As you know, Wes and I are JAZZ fans, obviously one is more fanatical than the other in this twosome, and we all know who that is. However, I love love LBJ! and the fact that the Heat only come to utah once a year- i had to go. So I asked, okay- literally begged for , some tickets from a friend i work with and he delivered!! 18th row above the Jazz bench.

 I love getting to the games early- to eat, relax and watch the warm ups....maybe take some pictures of ourselves...




Here is LeBron (!!!)  infront of the basketball cart- i did tingle a little when i saw him...






His infamous powder toss! i timed this shot well!!!

My favorite Jazz Player- Gordon Hayward! who happened to have 12 points, 5 rebounds and 5 assists AND an awesome block!



We won by 1 point! An awesome three pointer by Devin Harris, and a failed shot attempt by Udonis Haslem  of the Heat at the last second. Wes and I dub this one of the best live games we have been to together. we really had a good time - and the weekend fun continues as we head off to Wendover, where im getting a  lesson on black jack, and rocking out to 311 at the concert hall! TBC.....
