Cinco De Mayo!

AHHH! I seriously had my menu planned a week in advance. LOVE holidays where i can make yummy food, and share it! Went to a BBQ  and had a fiesta , had fun with good friends and smelled like a camp fire after i was all done :)

I bust out my Mango Avocado Salsa only once a year- it really is (no holding back my pride here) the best salsa EVER!

6 Roma tomatoes, seeded (scoop out the middle with a spoon- getting all the 'slime' out)
2 avocados
2 mangos
1 jalapeno, seeded, and deribbed (unless you like spice)
2 TB of chopped cilantro
1 TB of chopped red onion
2 TB fresh lime juice
1/4 tsp garlic powder- or use fresh garlic if you prefer
1/4 tsp salt

add the tomatoes, onion and jalapeno first, add salt to pull out the juices of the tomato and let sit. I chop my mango and cilantro and add to the bowl. Squeeze lime juice into a bowl yielding 2 TB, add garlic powder. I gently cube my avocado and add it to the lime juice, to prevent the browning. combine avocado to the rest of the salsa and combine gently, not mushing the avocado. Cover salsa and let sit in refrigerator for a few hours to allow flavors to combine and juices distribute. Serve with Mission ( must be Mission) tortilla chips.


Next, Cilantro Lime Shrimp. Cassie helped me with this and kept saying how easy it was. It is so delicious!

1 lb of shrimp, any size you like
Cumin
Garlic Powder
Salt and Pepper
Olive oil
2 limes, cut in half for squeezing
2 TB of cilantro

Marinade your shrimp in a big zip loc back with olive oil, a dash of cumin and garlic powder.
Heat some oil in a pan and add shrimp to pan in a single layer, not over crowding the pan. Shrimp cooks fast- once one side turns pinks, flip and cook the other side til pink. immediately pull out of pan, squeeze with lime juice and sprinkle with cilantro while its still warm. Serve alone or with Fiesta Rice- 2 cups of cooked brown rice, i can of fiesta corn, juice of a lime, salt and pepper and cilantro- combine and serve.

to finish off the meal- we had to choose cerveza that only the most interesting man would drink...

We finished off the rest of the BBQ with grilled chicken, grilled pineapple, more cervesa, and cake. Such a fun Cinco De Mayo!

My Day began with breakfaSt from the hubby-BACON AND EGGOS! Awwwww :)


And ended with the Supermoon..
