Lemon Iced Citrus Cranbery Scones

You know when you just have that itch to bake...I get it everytime i watch 4 hours of food network.

On this day i made Scones.

Here is the basic recipe, no fancy equipment needed.

2 Cups AP Flour or cake flour, plus more as needed
1 scant teaspoon of salt
4 teaspoons of baking powder
2 TB of sugar
5 TB of COLD butter
3 eggs
3/4 Cream
1/3 cup dried cranberries or raisins

Preheat  Oven to 450 degrees
combine dry ingredients, reserving 1 tablespoon of sugar.
Beat 2 eggs( reserve 1 egg for brushing) with the cream in a large bowl, combine with dry ingredients, fold in dried fruit.

pour mixture out onto floured surface, add additional flour if dough is too sticky, add in butter that is cold and cut into small pieces. work the butter in the dough until there is small pieces of butter worked throughout.
Press the dough to 3/4 inch thick and cut into 2 inch round and put on an ungreased baking sheet, about 2 inches apart.

Beat the remaining egg and brush the tops of the scones and sprinkle with the reserve tablespoon of sugar. bake for 7-9 minutes or until golden brown.

OBVIOUSLY i made some modifications!

I used half whole wheat and half white flour. I also used skim milk.

to make the scone a little more tender, because i didn't have cream, i added about a teaspoon of baking soda.

I plumped up the cranberries in OJ in a small bowl, zapped it in the microwave just so it was a warm plumping process.

I also added the zest of one lemon in my dough. this is a very citrusy scone!

My dough was super sticky so i bet i added another cup of flour in the end. instead of cutting the dough into two inch rounds i just picked up pieces, balled them up and kind of flattened them on the cookie sheet. i skipped the brushing of the tops with eggs and the sprinkling with sugar, since i was going to make an icing.

The icing was the juice of a large lemon and a couple cups of powdered sugar. When the scones came out of the oven and cooled, i dipped the scones in the icing.

with the wheat and the skim milk- its pretty good for you haha- other than the butter and icing! Delicious and tender scones! Great for breakfast on the go.

even though i couldn't taste them myself ( dieting, ugh- and i didn't have ONE taste, I PINKY SWEAR) All i know is that it passed the Husband test- thats like an A+,with  extra credit

A Perfect Sunday in July

Wes and I love brunch! Especially at The Fiddlers Elbow- because for $15 you get prime rib, salmon, waffles, omelets, the best bacon, and so much more yummy food. We always talked about doing brunch and then a baseball game with a few friends and , of course, if you know me- i can't turn down planning a get together!

Facebook invite went out, tickets were purchased and poof- A Sunday Funday to remember.

3 plates of food and 3-4 bloody mary's later (and i think a mimosa)- we head to the stadium and get treated to a spectacular view of the field in our suite

This is Kevin and Trisha (an OG from Texas). Both having classic Baseball food- Hot dogs and Beer- A MUST!

Frank Layden was in the next suite behind us.
The Butlers, okay not really...just Ryan and Paige

 The BEE

Picture perfect Sunday- Baseball, friends and food!

Post Brunch and Bees

After the game some of the girls and I went to get pedicures and manicures- while some of the guys went to The Pointe After to keep the fun going.

We girls couldn't contain our excitement, obviously

We met up with them after our nails got all pretty and ordered drinks and dinner.

Had to get a snapshot of these Aggies

I couldn't have asked for a more perfect Sunday with friends! Can't wait to  do this again!

One Year and Counting...

One year ago...

I remember it was such a happy day, people say I had a smile on my face beginning to end..and I really was just blissfully happy. I didn't have happy tears in me, i just remember my cheeks hurt after it was all done. The day was perfect! other than it almost being 100 degrees outside.

Of course we did the traditional thing of eating the cake topper. This thing traveled three times with us, and took up a good square foot of freezer space in our already tiny freezer.

Five layers of Seran wrap and this cake was so moist and tasted awesome!! If you remember what it tasted like, it was a chocolate cake with raspberry filling and a decadent cream cheese frosting. The girl who made it...Heather, simply awesome and uber talented. Thank you so much Heather!

I saved all of our wedding cards, and bridal shower cards. We sat and ate cake, drank wine and read out loud all of the sweet messages from our friends and families

We even found an unused Target gift card in one of the cards! ( Maggie- this was yours!) So, now im so glad we went through these again- lets go shopping!

And finally, we danced again to our first song..I tear up everytime I hear this, and am reminded what a lucky girl I am, to have married such a sweet, genuine, and honest man. Wes tells me every single day he loves me, that i am beautiful and how happy he is with me.

I asked him the other day, " did you ever think 5 years ago you'd be married?" and he said " No, 5 years ago, all i cared about was finishing my last semester of college, working at Birchcreek, and playing Beer Pong"  I laughed for about a minute, and then realized how important i must have been to him to flip his mattress and commit to a lifetime of marital responsibility. I look forward to many more anniversary celebrations with him, starting a family and continue our humorous adventures with each other, our families, and our friends.
