You know when you just have that itch to bake...I get it everytime i watch 4 hours of food network.
On this day i made Scones.
Here is the basic recipe, no fancy equipment needed.
2 Cups AP Flour or cake flour, plus more as needed
1 scant teaspoon of salt
4 teaspoons of baking powder
2 TB of sugar
5 TB of COLD butter
3 eggs
3/4 Cream
1/3 cup dried cranberries or raisins
Preheat Oven to 450 degrees
combine dry ingredients, reserving 1 tablespoon of sugar.
Beat 2 eggs( reserve 1 egg for brushing) with the cream in a large bowl, combine with dry ingredients, fold in dried fruit.
pour mixture out onto floured surface, add additional flour if dough is too sticky, add in butter that is cold and cut into small pieces. work the butter in the dough until there is small pieces of butter worked throughout.
Press the dough to 3/4 inch thick and cut into 2 inch round and put on an ungreased baking sheet, about 2 inches apart.
Beat the remaining egg and brush the tops of the scones and sprinkle with the reserve tablespoon of sugar. bake for 7-9 minutes or until golden brown.
OBVIOUSLY i made some modifications!
I used half whole wheat and half white flour. I also used skim milk.
to make the scone a little more tender, because i didn't have cream, i added about a teaspoon of baking soda.
I plumped up the cranberries in OJ in a small bowl, zapped it in the microwave just so it was a warm plumping process.
I also added the zest of one lemon in my dough. this is a very citrusy scone!
My dough was super sticky so i bet i added another cup of flour in the end. instead of cutting the dough into two inch rounds i just picked up pieces, balled them up and kind of flattened them on the cookie sheet. i skipped the brushing of the tops with eggs and the sprinkling with sugar, since i was going to make an icing.
The icing was the juice of a large lemon and a couple cups of powdered sugar. When the scones came out of the oven and cooled, i dipped the scones in the icing.
with the wheat and the skim milk- its pretty good for you haha- other than the butter and icing! Delicious and tender scones! Great for breakfast on the go.
even though i couldn't taste them myself ( dieting, ugh- and i didn't have ONE taste, I PINKY SWEAR) All i know is that it passed the Husband test- thats like an A+,with extra credit
